Hiya, I do green and red lentils, rinse thorough then soak them overnight or a min of 12 hours, then rinse again, put them on a plate or somewhere they are on a flat surface spread out, cover with a layer of wet kitchen roll then put then in the fridge, give it a couple of days and you will see tiny white "tails" on them, then rinse again thoroughly, pat them dry and then you can serve them. Kepp refrigerated in an air tight container, I only keep them for a few days.
Have a taste of them yourself first, and smell them, if they taste fresh and crunchy they are fine, if the smell offensive or rancid, chuck them.
Basically during the process, you dont want them too hot or too cold, just a nice cool temp.

Carol, Waitrose do a great 10 bean mix, so thats a good starter, then go into holland and barratt and get some buckwheat and quinoa, the last two dont need soaking, you add about 20 mins before end of cooking.
Basically get a portion of 10 bean mix and soak overnight, then rinse, then start cooking it, boil on high for about 15 mins, have a jug of boiling water on the side, because when you add the quinoa it absorbs the water a lot, so you have to keep an eye out for it. I also add brown rice red caermegu rice(doint know how to spell that) then I add plain natural porridge oats.
So, when your bean mix has been boiling for 20 mins, then add all the other rices, porridge, buckwheat, quinoa etc,
then carry on boiling and stirring for another 20. then turn the heat down, add frozen peas and corn, pineapple, banana, pomegranite, broccilii, spinach, basically any lovely fresh veg you have available. Cook for a few more minutes until the peas are cooked, then cool, and then I add crushed almonds, hazelnuts, and walnuts, all you need to do is make sure what you add is fit for human consumption.
Then I split into portions and freeze. You can add a lot more, use your imagination  ;D
