How do I go about step up training?

I just posted today in "Introduce Yourself" about my 25 year old, male CAG that I adopted two years ago.  He lets met pet his head, but that is the only contact that he allows me and even then he sometimes goes to bite.  Can someone give me the basics of how to go about step up training?  Thanks.

I would like help with this too, this is the same issue I have with Dino and have no idea how to proceed for the best  :-\
